Lemon Poundcake
with Blackberries, Kiwis & Raspberry Puree |
| Ingredients: |
Lemon Poundcake- 1/2 cake cut into 1" dice |
 |
| Fresh Kiwis- 3 each, peeled & cut into wedges |
| Fresh Blackberries- 1/2 pint, free of blemishes |
| Simple Syrup- 3 Tbsp. |
Lemon Zest- 1/2 tsp., finely minced |
Raspberry Puree- 1 1/2 cups |
| Whipped Cream, Ice Cream, or Cream Fraiche |
| Instructions: |
| Prepare all your ingredients, mix the fruit with the syrup and the zest. Let stand five minutes. Pour the puree on the bottom of the dish, reserving some to garnish the top. Place the poundcake on the sauce and arrange the fruit over the top. Serve with whipped cream or ice cream or cream fraiche |
