Lobster with Italian Broccoli and Blood Orange Butter |

| Ingredients: |
| ˝ cup softened unsalted butter |
| 1/3 cup blood orange juice |
| ˝ tsp paprika |
| 1 tsp chopped parsley |
| salt & pepper to taste |
| 1 live Maine Lobster |
| 1 lb. Italian Broccoli (Rappini) |
| 2 tbs Olive Oil |
| 4 Garlic Cloves peeled and sliced |
| salt & pepper to taste |
| Directions |
| 1. Place the butter, orange juice, paprika and parsley in a robot coupe, mix until it's incorporated add salt and pepper to taste rolled in waxed paper and keep cold. |
| 2. Steam your lobster for 10-12 minutes, take this time to blanch your rappini. |
| 3. Sauté the rappini with the garlic cloves and olive oil, placed on a platter, crack the claws and cut around the lobster tail, served over the broccoli and enjoy the butter.
