Lobster with Italian Broccoli and Blood Orange Butter
Ingredients:
˝ cup softened unsalted butter
1/3 cup blood orange juice
˝ tsp paprika
1 tsp chopped parsley
salt & pepper to taste
1 live Maine Lobster
1 lb. Italian Broccoli (Rappini)
2 tbs Olive Oil
4 Garlic Cloves peeled and sliced
salt & pepper to taste
Directions
1. Place the butter, orange juice, paprika and parsley in a robot coupe, mix until it's incorporated add salt and pepper to taste rolled in waxed paper and keep cold.
2. Steam your lobster for 10-12 minutes, take this time to blanch your rappini.
3. Sauté the rappini with the garlic cloves and olive oil, placed on a platter, crack the claws and cut around the lobster tail, served over the broccoli and enjoy the butter.
