Red Flame Grapefruit with Vanilla Cream Sauce

Serves 4

Ingredients: Red Flame Grapefruit with Vanilla Cream Sauce
3- red flame grapefruit, sectioned
1- vanilla bean
¼ cup- sugar
1 oz- dark rum
2 cups- heavy cream
powdered sugar to garnish
Directions
1. Arrange Grapefruit sections in bowl evenly and set aside
2. To prepare sauce, split and scrape vanilla bean and combine with sugar and heavy cream in a saucepan. Add dark rum
3. Bring to a boil, lower heat to medium and reduce for 6 minutes until sauce thickens and coats the back of spoon.
4. Pour sauce over chilled grapefruit sections while sauce is still warm. Garnish with powdered sugar and serve immediately.
