Salmon Roulade with Garlic Crostini

Salmon Roulade with Garlic Crostini
3 pounds Lox
3 pounds Cream Cheese
2 Roasted Red Bell Peppers
1/2 cup Green Onion
1 Tbsp Fresh Garlic
1 Tsp Salt
1 Tsp Pepper
1/2 cup Fresh Lemon Juice
1/2 cup Fresh Lime Juice
Garnish: Red Onion, Green Onion, Capers, Red Pepper, Yellow Pepper and Green Pepper

Directions
Lay out a piece of heavy-duty aluminum foil 18"x24". Over that lay a piece of clear plastic film 18"x24". Lay out the lox overlapping to form a 10"x20" form.

In a food processor add one half of the cream cheese, the peeled and seed red bell peppers, green onion, garlic, salt and pepper. Mix until smooth. Add approximately 2 cups of Panko as a binding agent, mix again until smooth. Remove from processor.

Now mix the other half of the cream cheese with the lemon and lime juice. Add about 2 cups of Panko and mix until smooth.

In the middle of the lox lay a line of the red pepper mix. Next to that lay a line of the lemon, lime mix. Use the plastic film to form a log, then the foil to roll. Refrigerate for one house before cutting the portion.

Garnish with diced red onion, capers, yellow, green and red bell peppers and garlic crostini.
